Jalapeño Poppers

Ingredients:

10-12 Large Jalapeños

8oz Cream Cheese, softened

1/2c Cheddar Cheese, shredded

2T Green Onion, sliced

1/4t Salt

1/4t Garlic Powder

1/4t Smoked Paprika

2T Butter

1/4c Panko Bread Crumbs

2T Fried Shallot (Thai Fried Red Onion)


Directions:

1. Preheat oven to 425F

2. Line baking sheet with parchment paper

3. Slice jalapeños in half, lengthwise. Remove seeds and membrane

4. In medium bowl, mix together cream cheese, cheddar cheese, green onion, salt, garlic powder and paprika, until well blended

5. Heat butter in a small skillet over medium heat

6. When butter is melted, add panko bread crumbs and cook 2-3 minutes, until golden brown

7. Mix in fried shallot with panko, set aside

8. Fill jalapenos with cheese mixture (you may or may not have leftover filling, depending on the size of your jalapeños / how full you fill them)

9. Place on prepared baking sheet and sprinkle with panko / onion mixture

10. Bake 12-15 minutes
